Welcome to « La cuisine d’yvan et cuisine provençale » in my contemporary style.

My cuisine reflects who I am.

I love cooking since my childhood and I travelled the world to learn and share.

My kitchen is situated on the grounds of a 15 century castle,le château du Breuil,10 minutes from SAINT RéMY DE PROVENCE.

Nature surrounds the house built 2 centuries ago

The kitchen is a combination of art works from different local artists and colorful kitchen equipment

I explore the Provence traditions with my experience as a chef with my own vision,free to improvise or transform as my inspiration tells me 

I have been a chef in 12 countries and I hosted hundreds of tv shows in France, China and Great Britain 

Cooking is essentially,in my opinion,a form of expression to be shared with you !

Cooking class in Provence is definitely the favorite time of my chef’s life.

The kitchen has a very colorful  decor to entertain the eyes and relax,essentiel to open the mind 
I offer private and collective cooking classes on contemporary french and provençale cuisine

My philosophy

Only local produces,often organic and seasonal menu to match availability at its best. 
I create a menu in four courses which allow to create many recipes.
After class i send you a recipe pack by email with over 10 recipes of my own creation.
Morning class starts at 10H30 am or 10 am for a large group. 
We prepare the menu for close to 2 hours, not rush, with discussion about the techniques or additional recipe infos.
I love to share my life’s adventures or stories about the kitchen environment.
I published 14 cookbooks filled with hundreds of recipes of my own creation.
My new book, A COOK IN A SUITCASE, will be published in the spring 2026, my chefs adventures in the world ,including 40 of my favorite recipes.

Anyway I talk too much… HAHAHA

Then lunch takes place around the large table,the centerpiece of the kitchen with my favorite organic wines from Provence
The class and lunch finishes around 2 pm
If you wish, on wednesday, Thursday, Friday or Saturday a market visit can be combined in Saint Rémy de Provence, Fontvieille or Arles

French lifestyle …. Who am I

I grew up in a typical middle class family in brittany (bretagne) the ouest coast of France

At the age of 7, I saw a chef celebrity on TV and I decided I would be a chef like him, his name Michel Oliver

That is how it all started……

30 years later I realised that I also wanted to be an entertainer,like him….

I trained in Nantes,my home town, with a master chef for 2 years, the traditional  apprenticeship in a very rigorous way with chef Raymond Pondeville, a great chef !

I was 16 years of age…. The tuff life began

Then Paris, the Ritz hotel, the Crillon hotel, icons of the palace kitchens, a michelin star restaurant  near Versailles, a famous bistro, LIPP Saint Germain des prés, then I took off for 15 years around the world, commis then chef, head chef at 21 in Portugal, the algarve .

At 24 exécutive chef in a luxury hotel in the west indies…

England, Spain, Italy, Portugal, Scandinavia, The far east, Barbados, Jamaïca, Antigua……..

I returned to France ; Marseille in 1995 to create a bistro style restaurant, only cooking with the market’s seasonal ingredients, totally invested, 15 hours a day in my tiny kitchen, my best creative years….

Great success but I wanted to host my own tv shows and dedicated all my time to tv shows, cookbooks and performing on stage, which I did for 10 years.

My last and most pleasant move was to settle in the country near Saint Rémy de Provence, in my actual place since 2014 with COOKING CLASSES IN PROVENCE and I love it !

Sharing my experience, entertaining, cooking LA CUISINE PROVENÇALE, inspired by my rich Marseille and Provence experience, with a contemporary approach is rewarding 

My tv shows experience combined with my chefs life is what makes my style
